1931년 미국 화학자 아서 폭스가 실험 중 날린 가루를 동료는 쓰다고 했는데 자신은 아무 맛도 못 느꼈어요. 이 물질(PTC)의 쓴맛을 느끼는지는 유전으로 갈린다는 게 밝혀졌어요. 브로콜리나 쓴 채소를 싫어하는 정도와도 관련이 있다는 연구가 있어요.
